Ingredients
- 1 cup uncooked orzo pasta
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 cups chopped broccoli florets
- 2 cups chicken or vegetable broth
- 1/2 cup milk (or half-and-half for extra creaminess)
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- Optional: Red pepper flakes or fresh parsley for garnish
Instructions
Step 1: Sauté the Garlic
- In a large skillet or saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Step 2: Add Broccoli
- Stir in the broccoli florets and cook for 2–3 minutes until they start to soften.
Step 3: Add Orzo and Broth
- Pour in the orzo and broth. Stir well, bring to a boil, then reduce to a simmer. Cover and cook for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Step 4: Make it Creamy
- Stir in the milk, cheddar cheese, Parmesan, butter, and garlic powder. Stir until smooth, creamy, and well combined. Season with salt and pepper to taste.
Step 5: Serve
- Serve warm, topped with a sprinkle of red pepper flakes, parsley, or extra cheese.
