- 1/4 cup shredded mozzarella cheese
- 2 tablespoons butter
- 1/4 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions (for garnish)
- 1/4 cup cooked bacon bits or sausage (optional)
For Serving:
- Sour cream
- Hot sauce
- Avocado slices
- Fresh herbs (parsley or cilantro)
Instructions
Step 1 – Preparation
- Wash and dice the potatoes into small cubes for even cooking.
- Whisk the eggs with milk, salt, and pepper in a bowl until smooth.
- Shred the cheese and prepare any optional ingredients like cooked bacon or sausage.
Step 2 – Cooking Process
- Cook the potatoes: Heat butter in a large skillet over medium heat. Add the diced potatoes, season with garlic powder, onion powder, and smoked paprika. Cook for 8-10 minutes, stirring occasionally, until crispy and golden brown.
- Add the eggs: Push the potatoes to one side of the skillet and pour in the beaten eggs. Gently stir until they start to set.
- Mix everything together: Once the eggs are almost cooked, combine them with the potatoes and continue cooking for another minute.
- Melt the cheese: Sprinkle shredded cheddar and mozzarella over the scramble, cover the skillet for 1-2 minutes until the cheese melts.
Step 3 – Final Touch & Serving
- Garnish with green onions and any additional toppings like bacon bits or fresh herbs.
- Serve immediately with sour cream, hot sauce, or avocado on the side.
- Enjoy warm and cheesy!
Notes
- Use pre-cooked potatoes to speed up cooking time.
- Don’t overcook the eggs – keep them soft and fluffy.
- Try different cheeses like Pepper Jack or Gouda for a unique twist.
- Add extra protein with diced ham, turkey, or black beans.
- For a crispy finish, broil the scramble for 1-2 minutes before serving.
