Description

Creamy, comforting Chicken Gnocchi packed with tender chicken, pillowy gnocchi, and savory herbs — a cozy, feel-good dinner in every bite!


Ingredients

    • 1 1/2 lbs boneless, skinless chicken breasts or thighs, diced

    • 1 tablespoon olive oil

    • 1 package (16 oz) potato gnocchi (fresh, refrigerated, or shelf-stable)

    • 2 cloves garlic, minced

    • 1/2 teaspoon dried thyme

    • 1/2 teaspoon dried basil

    • 2 cups chicken broth

    • 1 cup heavy cream or half-and-half

    • 1/2 cup grated Parmesan cheese

    • 2 cups fresh spinach

    • Salt and pepper, to taste

    • Optional: Crushed red pepper flakes, fresh parsley for garnish


Instructions

Step 1: Cook the Chicken

  • Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sauté the chicken for 6–8 minutes, or until cooked through and golden. Remove and set aside.

Step 2: Sauté Garlic and Herbs

  • In the same pan, add garlic, thyme, and basil, cooking for 1 minute until fragrant.

Step 3: Add Gnocchi and Broth

  • Stir in the gnocchi and chicken broth. Bring to a simmer and cook uncovered for 5–6 minutes, stirring occasionally, until gnocchi is tender and broth is slightly reduced.

Step 4: Make it Creamy

  • Reduce heat to low. Stir in heavy cream, Parmesan, and spinach. Add the cooked chicken back to the pan. Simmer for 2–3 minutes until thick and creamy.

Step 5: Serve

  • Season to taste with salt, pepper, and crushed red pepper flakes. Garnish with fresh parsley and extra Parmesan.

Notes

  • Use fresh gnocchi if possible — they cook quickly and have a light, pillowy texture.
  • Add extra veggies like mushrooms, peas, or zucchini for more color and flavor.
