Creamy, comforting Chicken Gnocchi packed with tender chicken, pillowy gnocchi, and savory herbs — a cozy, feel-good dinner in every bite!
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, diced
- 1 tablespoon olive oil
- 1 package (16 oz) potato gnocchi (fresh, refrigerated, or shelf-stable)
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 2 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper, to taste
- Optional: Crushed red pepper flakes, fresh parsley for garnish
Instructions
Step 1: Cook the Chicken
- Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sauté the chicken for 6–8 minutes, or until cooked through and golden. Remove and set aside.
Step 2: Sauté Garlic and Herbs
- In the same pan, add garlic, thyme, and basil, cooking for 1 minute until fragrant.
Step 3: Add Gnocchi and Broth
- Stir in the gnocchi and chicken broth. Bring to a simmer and cook uncovered for 5–6 minutes, stirring occasionally, until gnocchi is tender and broth is slightly reduced.
Step 4: Make it Creamy
- Reduce heat to low. Stir in heavy cream, Parmesan, and spinach. Add the cooked chicken back to the pan. Simmer for 2–3 minutes until thick and creamy.
Step 5: Serve
- Season to taste with salt, pepper, and crushed red pepper flakes. Garnish with fresh parsley and extra Parmesan.

- Use fresh gnocchi if possible — they cook quickly and have a light, pillowy texture.
- Add extra veggies like mushrooms, peas, or zucchini for more color and flavor.
