Ingredients
For the Brownies:
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup granulated sugar
- ½ cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ¾ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking powder
For the Strawberry Layer:
- 1 ½ cups fresh strawberries, hulled and sliced
For the Chocolate Topping:
- 1 cup semisweet chocolate chips
- ½ cup heavy cream
- 1 teaspoon coconut oil or butter (for shine)
Instructions
Step 1: Prepare the Brownies
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
- In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until fully combined.
- Sift in cocoa powder, flour, salt, and baking powder, then gently fold until just incorporated. Avoid overmixing.
- Pour the brownie batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool completely before adding the next layer.
Step 2: Add the Strawberry Layer
- Arrange the sliced strawberries evenly over the cooled brownies, covering the entire surface.
Step 3: Make the Chocolate Ganache
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not boil).
- Remove from heat and pour over the chocolate chips. Let it sit for 2 minutes, then stir until smooth.
- Stir in coconut oil or butter for extra shine and smooth texture.
Step 4: Assemble & Chill
- Pour the chocolate ganache evenly over the strawberry layer, making sure to coat all the berries.
- Refrigerate for 1-2 hours, or until the chocolate is set.
Step 5: Slice & Serve
- Use a sharp knife to cut into squares.
- Serve chilled for a firm texture or let them sit at room temperature for a softer bite.
