Description

These Chocolate Covered Strawberry Brownies combine fudgy brownies, fresh strawberries, and rich chocolate for the ultimate indulgence!

Ingredients

For the Brownies:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder

For the Strawberry Layer:

  • 1 ½ cups fresh strawberries, hulled and sliced

For the Chocolate Topping:

  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream
  • 1 teaspoon coconut oil or butter (for shine)

Instructions

Step 1: Prepare the Brownies

  • Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs and vanilla extract, mixing until fully combined.
  • Sift in cocoa powder, flour, salt, and baking powder, then gently fold until just incorporated. Avoid overmixing.
  • Pour the brownie batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the brownies to cool completely before adding the next layer.

Step 2: Add the Strawberry Layer

  • Arrange the sliced strawberries evenly over the cooled brownies, covering the entire surface.

Step 3: Make the Chocolate Ganache

  • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not boil).
  • Remove from heat and pour over the chocolate chips. Let it sit for 2 minutes, then stir until smooth.
  • Stir in coconut oil or butter for extra shine and smooth texture.

Step 4: Assemble & Chill

  • Pour the chocolate ganache evenly over the strawberry layer, making sure to coat all the berries.
  • Refrigerate for 1-2 hours, or until the chocolate is set.

Step 5: Slice & Serve

  • Use a sharp knife to cut into squares.
  • Serve chilled for a firm texture or let them sit at room temperature for a softer bite.

Notes

  • Use Fresh, Ripe Strawberries – The sweeter the strawberries, the better the contrast with the rich chocolate.
  • Don’t Overbake the Brownies – Slightly underbaked brownies give a fudgier texture.
  • Chill for Clean Slices – Refrigerating before slicing prevents messy cuts.
  • Experiment with Chocolate – Try dark chocolate for richness or white chocolate for a fun twist.
  • Add a Crunch – Sprinkle crushed nuts or cookie crumbs over the ganache for extra texture.
