Ingredients
- ½ cup cottage cheese (full-fat or low-fat, well-drained)
- 3 large eggs, separated
- ¼ teaspoon cream of tartar
- ¼ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon garlic powder (optional, for added flavor)
- ½ teaspoon Italian seasoning (optional, for a herby twist)
Instructions
Step 1: Prepare the Ingredients
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Drain the cottage cheese well to remove excess moisture. You can press it with a paper towel for better texture.
Step 2: Whip the Egg Whites
- In a clean mixing bowl, add the egg whites and cream of tartar.
- Using an electric mixer, whip until stiff peaks form (this gives the bread its fluffy texture). Set aside.
Step 3: Mix the Egg Yolks & Cottage Cheese
- In a separate bowl, whisk together the egg yolks, cottage cheese, salt, baking powder, and optional seasonings until smooth.
Step 4: Fold in the Egg Whites
- Gently fold the whipped egg whites into the yolk mixture using a spatula. Be careful not to overmix, as you want to keep the airy texture.
Step 5: Shape & Bake
- Using a spoon, scoop small rounds of the mixture onto the lined baking sheet, leaving space between each.
- Bake for 25-30 minutes until they turn golden brown and slightly firm.
Step 6: Cool & Enjoy
- Let the cloud bread cool completely before removing from the baking sheet.
- Serve and enjoy! Try it with butter, jam, or your favorite spreads.
Notes
- Use well-drained cottage cheese to prevent a soggy texture.
- Whip the egg whites properly to create a light and fluffy consistency.
- Avoid overmixing when folding in the egg whites to keep the airy texture.
- For extra flavor, add shredded cheese, herbs, or even a pinch of cinnamon for a sweet twist!
