Ingredients
- 8 large eggs
- 1 cup cottage cheese (full-fat or low-fat, as preferred)
- 1/2 cup shredded cheddar cheese (optional, for extra creaminess)
- 1/4 cup milk (or oat milk for a dairy-light option)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 4 slices of sourdough or whole grain bread
- 1 tbsp olive oil or butter
- 4 strips turkey bacon or regular bacon (optional)
- 1 tbsp fresh chives or parsley, finely chopped
Instructions
1. Prep the Base
- Lightly toast your bread slices and set them aside. If you’re using bacon, cook it until crispy and chop into small bits.
2. Mix the Egg Mixture
