Ingredients

For the Chicken:

  • 1 ½ lbs boneless, skinless chicken thighs (or chicken breasts)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch + 1 tablespoon water (for thickening)

For the Bourbon Sauce:

  • ½ cup bourbon (or apple juice as a non-alcoholic substitute)
  • ½ cup low-sodium soy sauce
  • ¼ cup ketchup
  • ¼ cup apple cider vinegar
  • ½ cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

For Garnish:

Instructions

Step 1: Prepare the Chicken

  • Pat dry the chicken thighs and season both sides with salt and black pepper.
  • Place the chicken in the slow cooker in a single layer.

Step 2: Make the Bourbon Sauce

  • In a medium mixing bowl, whisk together bourbon, soy sauce, ketchup, apple cider vinegar, brown sugar, garlic, ginger, red pepper flakes, smoked paprika, and honey.
  • Pour the sauce evenly over the chicken in the crockpot.

Step 3: Slow Cook the Chicken

  • Cover and cook on LOW for 4-5 hours or HIGH for 2.5-3 hours, until the chicken is tender and easily shreddable.
  • Once cooked, remove the chicken and place it on a cutting board.

Step 4: Thicken the Sauce
