Ingredients

For the Chicken & Veggies:

  • lbs boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 garlic cloves, minced
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 3 cups broccoli florets
  • 4 cups fresh spinach

Optional Add-Ons:

  • Juice of ½ lemon
  • Red pepper flakes (for heat)
  • Parmesan cheese (for serving)

Instructions

Step 1: Cook the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken pieces, season with onion powder, paprika, salt, and pepper.
  • Cook for 5–7 minutes until golden and cooked through. Remove from skillet and set aside.

Step 2: Sauté Garlic and Broccoli

  • In the same skillet, lower heat and add butter and garlic. Sauté for 1 minute until fragrant.
  • Toss in broccoli and a splash of water. Cover and steam for 3–4 minutes until slightly tender.

Step 3: Add Spinach and Combine

  • Stir in fresh spinach and cook until wilted, about 2 minutes.
  • Return chicken to the skillet and toss everything together.
  • Squeeze in lemon juice or sprinkle red pepper flakes for extra zing.
