Ingredients
- 2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 cups fresh pineapple chunks (or canned, drained)
- 2 red bell peppers, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- Salt & black pepper to taste
- 2 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp chili flakes (optional)
For the Hawaiian Marinade
- ½ cup soy sauce (or tamari for gluten-free)
- ¼ cup pineapple juice (from the can or fresh)
- 2 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
Instructions
Step 1: Make the Marinade
- In a bowl, whisk together soy sauce, pineapple juice, honey, garlic, ginger, vinegar, and sesame oil. Set aside half of the marinade for drizzling later.
Step 2: Prep the Chicken
- In a large bowl, toss the chicken pieces with the remaining marinade. Let it sit for at least 20 minutes (or overnight in the fridge for deeper flavor).
Step 3: Preheat & Prep Sheet Pan
- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
Step 4: Add Veggies & Pineapple
- Spread the bell peppers, onions, and pineapple on the pan. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, pepper, and chili flakes.
Step 5: Add the Chicken
- Place the marinated chicken evenly over the veggies.
Step 6: Bake
- Bake for 25–30 minutes, stirring halfway through, until the chicken is cooked through and the veggies are slightly caramelized.
Step 7: Drizzle & Serve
- Once out of the oven, drizzle with the reserved marinade. Serve hot over steamed rice, quinoa, or cauliflower rice.
Notes
- 🍍 No Pineapple? Mango or peaches are great tropical swaps.
- 🔥 Spice it Up: Add sriracha or sliced jalapeños to the marinade.
- 🍚 Low Carb? Serve over greens or cauliflower rice.
- 🧄 Extra Garlic Lover? Toss in roasted garlic cloves with the veggies.
- 🥦 More Veggies? Add broccoli or zucchini for extra nutrients.
