Description

This Hawaiian Chicken Sheet Pan is sweet, savory, and full of island flavor. A one-pan dinner that’s healthy, colorful, and perfect for any night!


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 cups fresh pineapple chunks (or canned, drained)
  • 2 red bell peppers, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp chili flakes (optional)

For the Hawaiian Marinade

  • ½ cup soy sauce (or tamari for gluten-free)
  • ¼ cup pineapple juice (from the can or fresh)
  • 2 tbsp honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil

Instructions

Step 1: Make the Marinade

  • In a bowl, whisk together soy sauce, pineapple juice, honey, garlic, ginger, vinegar, and sesame oil. Set aside half of the marinade for drizzling later.

Step 2: Prep the Chicken

  • In a large bowl, toss the chicken pieces with the remaining marinade. Let it sit for at least 20 minutes (or overnight in the fridge for deeper flavor).

Step 3: Preheat & Prep Sheet Pan

  • Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.

Step 4: Add Veggies & Pineapple

  • Spread the bell peppers, onions, and pineapple on the pan. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, pepper, and chili flakes.

Step 5: Add the Chicken

  • Place the marinated chicken evenly over the veggies.

Step 6: Bake

  • Bake for 25–30 minutes, stirring halfway through, until the chicken is cooked through and the veggies are slightly caramelized.

Step 7: Drizzle & Serve

  • Once out of the oven, drizzle with the reserved marinade. Serve hot over steamed rice, quinoa, or cauliflower rice.

Notes
