Ingredients

Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
Step 2: Make the Batter
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in the milk, melted butter, and vanilla extract until well combined.
- Pour the batter into the greased baking dish.
Step 3: Prepare the Lemon Filling
- In a saucepan over medium heat, combine lemon juice, lemon zest, sugar, and water.
- In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.
- Add the slurry to the saucepan and stir constantly until the mixture thickens into a syrup-like consistency.
Step 4: Assemble & Bake
- Slowly pour the lemon filling over the cobbler batter. (Don’t stir—the batter will rise to the top as it bakes!)
