Ingredients

For the Cobbler Batter:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Lemon Filling:

  • 1 cup fresh lemon juice (about 45 lemons)
  • Zest of 2 lemons
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons cornstarch

For Topping (Optional):

  • Powdered sugar for dusting
  • Vanilla ice cream or whipped cream

Instructions

Step 1: Preheat & Prepare

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.

Step 2: Make the Batter

  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. Stir in the milk, melted butter, and vanilla extract until well combined.
  3. Pour the batter into the greased baking dish.

Step 3: Prepare the Lemon Filling

  1. In a saucepan over medium heat, combine lemon juice, lemon zest, sugar, and water.
  2. In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.
  3. Add the slurry to the saucepan and stir constantly until the mixture thickens into a syrup-like consistency.

Step 4: Assemble & Bake

  1. Slowly pour the lemon filling over the cobbler batter. (Don’t stir—the batter will rise to the top as it bakes!)
  2. Bake for 35-40 minutes, or until the top is golden brown and slightly crispy.
  3. Remove from the oven and let it cool for about 10 minutes before serving.

Step 5: Serve & Enjoy

Dust with powdered sugar and serve warm with a scoop of vanilla ice cream or whipped cream for an extra indulgent treat!

Notes

  • Use fresh lemons: Freshly squeezed lemon juice gives the best flavor—avoid bottled juice if possible.
  • Don’t stir the layers: Pouring the lemon mixture over the batter creates the perfect cobbler texture.
  • Adjust the sweetness: If you prefer a tangier cobbler, reduce the sugar slightly.
  • Make it extra gooey: Bake for a few extra minutes if you love a thicker, caramelized filling.
