Description

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 3 tablespoons olive oil
  • Juice and zest of 2 limes
  • 3 cloves garlic, minced
  • 1 tablespoon honey or maple syrup (for balance)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

Step 1: Marinate the Chicken

  • In a bowl or zip-top bag, whisk together the olive oil, lime juice and zest, garlic, honey, cumin, smoked paprika, salt, and pepper. Add the chicken, coat well, and marinate for at least 30 minutes or up to 8 hours.

Step 2: Cook the Chicken

  • Grill: Preheat grill to medium-high. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F.
  • Pan-Sear: Heat a skillet over medium-high heat. Cook chicken for 5–7 minutes per side.
  • Bake: Preheat oven to 400°F (200°C). Bake for 20–25 minutes, until cooked through.

Step 3: Rest and Serve

  • Let chicken rest for 5 minutes, then slice and serve. Garnish with fresh cilantro and lime wedges.
