Ingredients
- 1 large head of cauliflower, cut into florets
- 1 cup sour cream
- 1/2 cup cream cheese, softened
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup shredded mozzarella cheese
- 6 slices cooked bacon, crumbled
- 3 green onions, sliced
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Step 2: Cook the Cauliflower
- Steam or boil the cauliflower florets for 7–8 minutes, or until fork-tender. Drain well and pat dry with paper towels to remove excess moisture.
Step 3: Mix the Creamy Base
- In a large bowl, mix together the sour cream, cream cheese, half the cheddar cheese, mozzarella, garlic powder, onion powder, salt, and pepper.
Step 4: Combine
- Add the cooked cauliflower, half the crumbled bacon, and half the green onions to the creamy mixture. Stir gently to combine.
Step 5: Bake
- Pour the mixture into the prepared baking dish. Top with the remaining cheddar cheese and bacon. Bake for 20 minutes, or until bubbly and golden.
Step 6: Garnish and Serve
- Top with the remaining green onions and fresh parsley. Serve hot.
Notes
- Dry the cauliflower thoroughly — too much moisture makes it watery.
- Use block cheese and shred it yourself for the best melt and flavor.
- Customize the toppings with jalapeños, extra bacon, or different cheeses.
