Ingredients
- 1 cup creamy peanut butter (natural, unsweetened preferred)

- 1 teaspoon vanilla extract
- 1½ cups rolled oats
- ¼ teaspoon salt
- ¼ cup chopped nuts or chocolate chips (optional)
- 1 tablespoon coconut oil (for a smoother texture)
- ½ teaspoon cinnamon (optional, for extra flavor)
Instructions
In a microwave-safe bowl, warm the peanut butter, honey, and coconut oil for about 30 seconds until softened. Stir well to combine, then mix in the vanilla extract and salt.
Fold in the rolled oats, cinnamon, and optional mix-ins (chocolate chips or nuts). Stir until the oats are fully coated with the peanut butter mixture.
Line a muffin tin with silicone or paper liners. Spoon the mixture evenly into the cups, pressing down slightly to compact them.
Place the tray in the refrigerator for at least 30 minutes or until firm.
Once set, remove the oat cups from the muffin tin and enjoy! Store leftovers in an airtight container in the fridge for up to one week.
