Ingredients

For the Crust:

    • 1½ cups graham cracker crumbs

    • ⅓ cup sugar

    • ½ cup (1 stick) unsalted butter, melted

For the Filling:

    • 1 package (8 oz) cream cheese, softened

    • 1 can (8 oz) crushed pineapple, drained (reserve 2 tbsp juice)

    • 1 package (3.4 oz) instant vanilla pudding mix

    • 1 cup cold milk

    • ½ teaspoon vanilla extract

For the Topping:

    • 1 cup whipped topping (like Cool Whip)

    • Optional: toasted coconut or chopped pineapple for garnish

Instructions

Step 1: Make the Crust

  • In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  • Press mixture firmly into a greased 8×8-inch baking dish.
  • Chill in fridge while you prepare the filling.

Step 2: Prepare the Pineapple Filling

  • In a large bowl, beat cream cheese until smooth.
  • In a separate bowl, whisk pudding mix and milk until thickened (about 2 minutes).
  • Stir in vanilla extract and reserved pineapple juice.
  • Fold the pudding into the cream cheese, then fold in crushed pineapple.

Step 3: Assemble and Chill

  • Spread the pineapple filling evenly over the crust.
  • Top with whipped topping and smooth out.
  • Chill for at least 2 hours or overnight for best texture.

Step 4: Slice and Serve

  • Cut into squares, garnish with toasted coconut or fresh pineapple if desired, and enjoy chilled.

Notes

  • Gluten-free: Use gluten-free graham crackers for the crust.
  • Vegan-friendly: Sub vegan cream cheese and coconut whipped topping.
  • Add crunch: Layer in chopped pecans or macadamia nuts.
  • Boost the tropical: Add a splash of coconut milk to the filling.
