Ingredients

- 1 package (8 oz) cream cheese, softened
- 1 can (8 oz) crushed pineapple, drained (reserve 2 tbsp juice)
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup cold milk
- ½ teaspoon vanilla extract
For the Topping:
- 1 cup whipped topping (like Cool Whip)
- Optional: toasted coconut or chopped pineapple for garnish
Instructions
Step 1: Make the Crust
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press mixture firmly into a greased 8×8-inch baking dish.
- Chill in fridge while you prepare the filling.
Step 2: Prepare the Pineapple Filling
- In a large bowl, beat cream cheese until smooth.
- In a separate bowl, whisk pudding mix and milk until thickened (about 2 minutes).
- Stir in vanilla extract and reserved pineapple juice.
- Fold the pudding into the cream cheese, then fold in crushed pineapple.
Step 3: Assemble and Chill
- Spread the pineapple filling evenly over the crust.
- Top with whipped topping and smooth out.
- Chill for at least 2 hours or overnight for best texture.
Step 4: Slice and Serve
- Cut into squares, garnish with toasted coconut or fresh pineapple if desired, and enjoy chilled.
