Description

Ingredients

  • 1 lb baby potatoes, halved or quartered
  • 1 lb smoked sausage (or kielbasa), sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prep the Ingredients

  • Wash and slice the potatoes.
  • Slice sausage, bell pepper, and onion.

Step 2: Sauté the Potatoes

  • Heat 1 tablespoon of oil in a large skillet over medium heat.
  • Add potatoes, season with salt, pepper, garlic powder, and paprika.
  • Cook for 10–12 minutes, stirring occasionally, until golden and almost tender.

Step 3: Add Sausage & Veggies

  • Add the remaining tablespoon of oil, sausage slices, bell pepper, and onion.
  • Cook everything together for another 10–12 minutes, until veggies are soft and sausage is browned.

Step 4: Garnish and Serve

  • Sprinkle with fresh parsley and serve hot!
