Ingredients
- 1 lb baby potatoes, halved or quartered
- 1 lb smoked sausage (or kielbasa), sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Prep the Ingredients
- Wash and slice the potatoes.
- Slice sausage, bell pepper, and onion.
Step 2: Sauté the Potatoes
- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Add potatoes, season with salt, pepper, garlic powder, and paprika.
- Cook for 10–12 minutes, stirring occasionally, until golden and almost tender.
Step 3: Add Sausage & Veggies
- Add the remaining tablespoon of oil, sausage slices, bell pepper, and onion.
- Cook everything together for another 10–12 minutes, until veggies are soft and sausage is browned.
Step 4: Garnish and Serve
- Sprinkle with fresh parsley and serve hot!
