Ingredients

For the Chicken Patties:

    • 1 lb ground chicken

    • ½ cup white cheddar cheese, shredded

    • 1 cup fresh spinach, finely chopped

    • ¼ cup breadcrumbs (panko or regular)

    • 1 large egg

    • 2 garlic cloves, minced

    • ½ tsp onion powder

    • ½ tsp smoked paprika

    • ½ tsp salt

    • ½ tsp black pepper

    • 1 tbsp Dijon mustard

    • 1 tbsp Worcestershire sauce

For the Burger Assembly:

    • 4 burger buns (brioche, whole wheat, or gluten-free)

    • 4 slices white cheddar cheese

    • ½ cup mayonnaise

    • 1 tbsp Dijon mustard

    • 1 tsp lemon juice

    • 1 tomato, sliced

    • 1 small red onion, thinly sliced

    • 4 leaves lettuce

Instructions

Step 1: Prepare the Chicken Patties

  • In a large bowl, mix ground chicken, shredded white cheddar, chopped spinach, breadcrumbs, egg, garlic, onion powder, smoked paprika, salt, pepper, Dijon mustard, and Worcestershire sauce.
  • Use your hands or a spoon to combine everything until evenly mixed.
  • Divide the mixture into 4 equal portions and shape into burger patties.
  • Place the patties on a plate, cover, and refrigerate for 10-15 minutes (this helps them hold their shape).

Step 2: Cook the Burgers

  • Grill Method:
    1. Preheat the grill to medium-high heat. Lightly oil the grates.
    2. Grill the patties for 4-5 minutes per side, or until fully cooked (internal temp: 165°F / 75°C).
    3. Place a slice of white cheddar on each patty in the last minute of cooking to melt the cheese.
  • Stovetop Method:
    1. Heat 1 tbsp olive oil in a large skillet over medium heat.
    2. Cook the patties for 4-5 minutes per side, flipping once, until fully cooked.
    3. Add a slice of white cheddar on top during the last minute of cooking and cover the pan to melt the cheese.

Step 3: Make the Sauce

  • In a small bowl, mix mayonnaise, Dijon mustard, and lemon juice. Set aside.

Step 4: Assemble the Burgers

  • Toast the burger buns lightly for extra texture.
  • Spread the sauce on the bottom bun.
  • Add lettuce, sliced tomato, red onion, and the cheesy chicken patty.
  • Top with the burger bun and serve immediately!

Notes

  • ✔️ Don’t Overmix the Meat – Overmixing can make the patties dense and dry.
  • ✔️ Chill the Patties – Refrigerating for 10-15 minutes helps them hold their shape.
  • ✔️ Use a Meat Thermometer – Chicken must be fully cooked to 165°F (75°C) for safety.
  • ✔️ Customize It – Add crispy bacon, avocado, or a spicy aioli for extra flavor.
